Kinda self explanatory. This is my pursuit of healthiness. I believe that being healthy in the body, mind, and spirit, truely does bring happiness.

Carrot Cake and Almond Butter Popsicles.

Ingredients:

4 large carrots

3/4 cup canned coconut milk

1/4 cup almond butter

Juice from 1/4 a lemon

Cinnamon, Ginger, Salt

Sweetener of choice

Sweet Potato Pancakes
I had this for breakfast this morning(along with fruit). I love these pancakes; they’re the perfect combination of complex carbs, protein and fats to refuel after an amazing workout and topped with all natural almond butter these will make your taste buds sing.
You will need:
1 small sweet potato,
2 organic free range eggs or 4 egg whites
1 tablespoon of coconut flour  (you can sub this with any flour of your choice or even protein powder)
Ground cinnamon and ground vanilla to taste
A little bit of water
Optional: stevia for extra sweetness
Prepare the sweet potato as you usually would (I like to steam or bake mine), then mash it up with a fork, add the remaining ingredients, mix well and cook in a non-stick pan with a little coconut oil on medium heat. Top with your topping of choice (highly recommend all natural almond butter) and enjoy. Have a lovely and healthy day guys.

I decided to make a lifestyle change! After 4 weeks of eating clean, working out and keeping myself motivated this is what happened! I’m 5’5 and not sure on my weight I try to focus on how I look. I have a cruise in 17 weeks so I’ll be documenting my progress! Thanks for all your support and inspiration! Lets do this! We can do anything we put our mind to! Chloethefitgirl

RAW LEMON GOJI BERRY BITES

2 cups raw almonds
Pinch of Himalayan salt
10 medjool dates, pitted and soaked for 15 minutes
Juice and zest of two meyer lemons
1/2 cup goji berries, chopped
1/2 cup unsweetened shredded coconut, optional

In a food processor fitted with the S blade, blend the almonds and salt into a fine meal. Add the dates and lemon juice/zest; pulse until combined. Transfer the mixture to a small mixing bowl and mix in the goji berries and coconut with a wooden spoon. Using a 1 teaspoon cookie scoop, drop the dough onto a baking sheet lined with parchment paper. Roll into round balls, if desired. Freeze for 30 minutes then transfer to an air tight container. Will keep in freezer for several months but I doubt they’ll last that long.
Yield: about 85 bites
